Neapolitan pizza is art. So are the ovens that bake it. The wood-fired oven is a key element in the baking of Neapolitan pizza. The moisture and aroma of the wood allows the crust to maintain its internal softness, as well as ensuring large bubbles inside the dough, and the typical aroma of cooked bread. All of these are hallmarks of true Neapolitan pizza. Our two ovens were handbuilt by a third-generation family company in Naples. Each oven complied to the most detailed constructive rules and lengthy process. Our ovens are unique because they’re made exclusively by hand, from raw materials like sand and stone harvested in Naples. They even weigh differently – our right oven weighs 8020 pounds, and our left oven weighs 7200 pounds. They both burn at the dome at about 1000º Fahrenheit, the temperature needed to bake Neapolitan pizza to perfection in just 90 seconds.

Caputo “00” flour is ideal for pizza dough for two reasons: one, it’s finely ground, and two, it has a lower gluten content than most flours. The “00” refers to the texture of the flour: Italian flours are classified by numbers according to how finely they are ground, from the roughest ground “tipo”1, to 0, and the finest 00.

Parmigiano Reggiano’s origins date back to the 12th century and since that time, artisan makers have stayed faithful to the identity and unique natural production of this iconic cheese. The minimum maturation time for Parmigiano Reggiano is 12 months, but when the cheese reaches approximately 24 months of age, it is at its best.
Parmigiano Reggiano PDO cheese is a mature, nutritious cheese with a rich, fruity flavor and a flaky and slightly grainy texture.
The PDO mark ensures that the name Parmigiano Reggiano can be applied only to the cheese produced in the area of origin (provinces of Parma, Reggio Emilia, Modena, Mantua on the right bank of the river Po and Bologna on the left side of the river Reno). It also means that it must be produced using specific artisan methods, by following a particular set of rules. It is the area, the natural feed, the high quality raw milk with no additives and its long aging process that makes Parmigiano Reggiano cheese unique.
Prosciutto di San Daniele is produced only in the Friuli Venezia Giulia region in the hilly area around the town of San Daniele in the province of Udine, in the extreme north-eastern part of Italy. Recognizable by its Consortium brand, Prosciutto di San Daniele is made solely with the meat of pigs born and bred in Italy and Italian sea salt.
